I bottle an extra from each batch to test around the time of the competition to make sure it was done correctly.

A buddy told me this morning that he found some wild persimmon trees yesterday in a park, so our minds immediately turned to beer. Now just trying to figure out what to brew. Figure we have another like 2 weeks before they fully ripen. Since I am on a huge sour kick, obviously thinking sours. Anyone have any experience brewing with persimmons?
