[center]This morning while doing some prep work for the fish fry this evening I got a little hungry. I was in the process of rolling boudin balls to be deep fried and thought it would make a good quick omelette. Sooooo I grabbed two of this mornings fresh eggs and did a quick scramble in the pan and added some boudin as the filling.
A couple of slices of honey wheat toast later and I had a pretty tasty quick breakfast.
I could have used some left over jambalaya from last night but this was quicker and besides IF there's any jambalaya left by tomorrow morning I could have that then.

Yes indeed. That looks really good.
I'm partial to jambalaya omelettes with day after leftovers.

I only know how to fold the omelet in half. I need to learn to do this, it looks good!

Flip left and right sides in a couple inches. Fold top down 2/3 way, then bottom to cover entire thing
Edit: looks like they left right side open

Love my omlets this way - with the heat controlled carefully so as not to brown the eggs.
IMO, perfect eggs on this one.
