I don't ever cook my red beans in a crock pot but I don't have time to cook them tonight so I was hoping to toss them in the crock pot on my lunch break and have them ready for dinner time.

What do I need to do differently if anything? The beans have been soaking since yesterday. I have my trinity and smoked ham shank ready. How much water? Low or high heat? How long will they take as opposed to in the pot?

I would just do what you normally do but add hot water to crock pot so it doesn't take them long to come up to temp and they should be good to go when you get home. I would put setting on low or med at most if you have a med setting.

Step 1: Determine if you want a New Orleans style or a Natchitoches style. This is very important.

I've recently switched to cooking them in a crock pot because its easier and comes out perfect every time. Literally dump in all the ingredients, seasonings and fill with water maybe an inch above beans. Set on low and you're good to go.

Soaking is important if making in crock. If they aren't soaked, they will suck up all the water and you will have a mess when you get home.

Lotta truth. I used to do it like this and would do the beans on warm for about 5 hours overnight then add more water and move to low when I went to work. Came out good, but in the morning almost all the water was gone.

I'd recommend that if you haven't pre-soaked the beans. If you have already soaked the beans, then water to the top of the beans will be fine. I've made the mistake of adding too much.

Hope I didn't add too much.

Just ladle some of the water out and mash a few on the side and it's creamy. Problem solved.

I cook them in the crockpot %90 of the time. Just do as you would normally do. You can put everything in the pot at the beginnining and let them rip. 8 hrs on med should be good. If they to watery take some beans out a mash them with a potato masher.

If I was you I'd put them on before you leave for work

You can also remove some of the liquid and reduce so that it will have a stronger flavor with less liquid. Then put it back in.

Soak the beans and add just enough water to cover the top of the beans. Add smoked hocks and hog jowls for 8 hours on low.
