I did it the lazy way, just dumped the dregs straight into the wort. You could go other ways, build a starter from the dregs or plate some of the dreg and recover from the plate. El Cedro dregs, theoretically, have both the JK farmhouse yeast and Brett. I'll probably try and isolate their farmhouse yest from a bottle that only has that yeast in it (actually apply my microbiology degree for once)
