Trout fried, sauteed, amondine, en papillote. Redfish half shelled or a courtbouillon.

Trout- fried or chiveche!
Redfish- grilled, baked, broiled, blackened. Pretty good fried, but trout is better.

Does the trout get mushy in ceviche? I love ceviche and make it often, but I thought it was best suited for firmer fish. I've had it with snapper, tuna, swordfish, wahoo, etc. Never anything soft like trout.
