Question about crock pot timing

I'd love to do more crock pot cooking while I'm away for the day, but the problem is, I can be away for a few hours more than the time that is ideal to achieve a perfect dish. Instead of buying a whole new crock pot with a timer, I was thinking about buying one of those timer accessories that you plug into.

My question is, should set the timer so that it begins a few hours after I'm gone, or should I start it right away and then cut it off and let it rest? I could see advantages each way. Concern for the protein sitting in the danger zone for too long before it begins to cook (I would sear/brown the meat), or what if I come home and find that it isn't quite cooked as long as I'd like it, now it's been sitting there off for a few hours.

Which do you think would be best?

A smart woman. This is what I would do also.

Mine has a 4 hour keep warm setting. When I have to work late, it's usually still on.

I don't have a timer. But if I'm gonna be gone for a long time I set it on low. Never had anything burn in it.

But then, I've never put food in it and then gone away for 2 weeks of vacation.

Mine has High for I think 4 hours, or low for 6 or 8. And after that it will stay on the keep warm setting. The only problem with a timer set to come on later is when you plug mine in, it isn't automatically on. You have to press the button to get it to the setting you want. I usually use the low 6 setting and it will still be warm 8 hours later when I get home.

ETA: my crock pot has a timer, so I can;t be helpful to the OP.

Looks like I'll simply invest in a crock pot with a timer rather than patch on a band-aid.
