Anyone ever make barbacoa for tacos in a slow cooker?

I always like having some meat for tacos on hand for a quick lunch/dinner, so I think I'm going to give this a try. What kind of stuff do you put into the crockpot. I saw a recipe for it using chipotle peppers, adobe sauce, chicken and beef broth, garlic, onion, and cilantro. Any other recommendations? Anybody try this before? Did it turn out well?

i take the cheek meat and i cook it for 8 hours in the oven on low. i lay it on minced garlic and onions. and a little salt and pepper.

in the morning, i make a salsa verde.

I know this is a deviation, but I would brown the meat first, and do a braise. I suppose you could brown then thrown in crock pot if you are forced.

ETA: haven't made it yet but food52 has a great complete recipe.

Put pork in crockpot until you can fork shred, then pan fry some carnitas.

I can't find the recipe I used, but it was real simple and good. Onions, bay leaf, carrots, chicken stock in the crock pot. I browned cubes of pork before putting them in the pot. I cooked the pork all day then let it cool and put in the fridge overnight. The next day, I took out the fat, bay leaf and carrots, shredded the pork and put in a lot of chili powder. It turned out good, but it made a shitload of meat. The Missus and I got tired of eating it and I think I ended up tossing some out.

Pretty much what you used. IDK the exact recipe but I think some cloves were added. Turned out really nice.

I've done it several times. All I put in there is a can of chipotle peppers, a can of Dr. Pepper and some brown sugar.

Be sure to serve it with black beans, cilantro lime rice and homemade ranch tomatillo dressing!
