I'll pobably blacken fish with ettouffee. Her brother went to tulane so the family is familiar with south LA spices and flavors.

I would cook Mr. B's bbq shrimp recipe for an appetizer.
Then I would do some filets tipped with a crawfish cream sauce followed by bananas foster or bread pudding for dessert
