I bring fresh cracklins back to Tampa whenever I visit LA. The Cubans here cant get enough of them. I watched two Cuban neighbors of mine devour a 1 lb bag in a matter of minutes last year. I hate to imagine what that did to their stomachs...

They make good crackings over there. And their meat pies and boudin balls are even better

If you haven't tried the smoked boudin you must. It's off the charts good. They have nice chunks of pork in it and the smoke flavor adds a nice touch.

I don't think I've had their boudin. I made a run over there last weekend with some friends of mine, we were going to a camp in St. Martin Parish for a bachelor party. We got all sorts of sausage, stuffed pork chops, sirloins stuffed with cream cheese and jalepenos and wrapped in bacon. It was all good.

I gotta go back soon and try that boudin.

Make sure you get the smoked. The regular is good but the smoked is great.

Their pork boudin is REALLY good, but stay away from the seafood boudin. It's basically just shrimp and rice. No real seasoning or flavor to speak of.

Also check out the stuffed pork tenderloin. Tender, juicy and amazing!
