I know you can't get real time satellite images but I'd like to recent one's just to look at the water I may want to fish.
Any sites that have this?

Check out the Department of Natural Resources coastal GIS stuff. It's as good as you can usually find.

google earth lets you pick the date of your photos, but they arent really that many available ones to looke through (they are normally several months apart). the GIS ones i've seen are not very recent. i think the most recent ones were 2010. unless i'm looking in the wrong place.
maybe try finding a web cam ? some weather stations have live webcam feeds.

Check out Louisiana Department of Natural Resources site and go to the SONRIS link. Interactive GIS and pretty user friendly.

are you talking like look at the current water clarity, etc? or just mapping of the area?

Use google and bings maps. They update different sections at different times. AllTrails is a good app to use for iPhone
