Ok, so there is a guy in laplace selling a 2005 WSM for $150. It does not have a thermometer in it. Can I just drill a hole in it and install an aftermarket one or will that make the porcelain crack?

they didnt come with a thermometer in '05? that's a good deal if it's lightly used. i would think you could drill it but im not sure about the porcelain

Just replace one of the grill screw/nuts on the side (that holds up the grill grate) with a thermometer. That way you get a true temp at the cooking surface and you don't have to drill anything. Your grate will rest on the thermometer at that location.

Also, I have both a WSM and a BGE (Akorn like). The BGE is a fine tool and a great grill or oven but it is NOT a smoker. The WSM is NOT a grill but an awesome smoker. The WSM has way more capacity for meat (2 levels) and a water pan for moisture/heat regulation. It also has a much longer fuel capacity which you can access without taking everything off. I've smoked for about 16 hours on one load and I can throw wood chunks in easily. You cannot do this on a ceramic grill.

If you want a smoker, get the WSM. If you want a grill, get the Akorn.
