Love Amberjack and Swordfish. Are those good to blacken?

Red Snapper or Red Fish are great off the grill.

Never tried them, but I was also going to say swordfish as well. Very tasty off the grill.

I don't mind snapper either, but I would rather pan sear it skin on. Outrageous.

Redfish and Black Drum.

In fact, while Redfish is the more popular of the two fish, Black Drum is actually a very pretty, tasty white meat.

Yep, except I find the Black Drum meat is actually prettier than the Redfish, doesn't have the blood line.

However, Black Drum at 25 inch plus size tend to be very wormy.

Right on all counts, but so are specs, and I'll take any you're giving away.

I like wahoo the best, but its an unforgiving fish to grill. I've dried out more hoo steaks than I care to admit. But that is some of the prettiest white meat there is.

I'll have to go with swordfish, although you have to be careful when grilling those steaks as they can dry out quickly.
