I have a question in regards to batting rules in baseball

There are 2 outs in an inning. A runner is on first. A batter is up with a full count (or any count) and a pick off happens at first ending the inning, who is up in the next inning?
Second, can you call for a pinch hitter halfway through a batters at bat where the pinch hitter will inherit the count of the previous hitter?
Things I feel like I should know but I never actually see this happen (or remember the outcome).

The same batter is up, with a fresh count. A caught stealing is the same thing.

Yes, you can pinch hit at any time during an at-bat and the pinch hitter will inherit the same count.

The guy batting leads off the next inning with a 0-0 count.

And if the other team puts in a relief pitcher in the middle of an at-bat they inherit the same count too.

Pickoff's and stealing with 2 outs is pretty rare I guess since I dont remember instances of this happening. (May just not have noticed though)
I have seen injury to a batter where a pinch hitter has inherited the count. Just have never seen a non-injury sub.

If not, you'd see a lot of pinch hitters late in games when there's an 0-2 count.

I was more thinking that if you were able to call in a pinch hitter with non injury. Not be able to reset the count by calling one in.

Pretty sure this is the case.
Also, didnt mean to say that it is rare as much as I dont remember the result of the next inning.
