When I tried attacking the titanite demon, he didn't appear to be taking any damage from my melee. Is there something special I need to do?

Work your way behind him , probably by rolling, and switch weapon to both hands. That's how I make quick work of him anyway. Depends on your character. Just like any enemy you have to learn his timing and attacks.
You can actually run right past him to get to Darkroot but you want to kill him eventually.

Or you can do what I did and buy shitloads of arrows and shoot at him for an hour.

Yea, I've heard that's a strategy that works. Prefer to not take forever to kill him though.

I actually did that for the 3 in Sen's fortress. This guy I hacked away at.
What I did, is I used the stairs at the back of the room. The different levels protect you some. His swings go over your head.
