Need some recomendations for some good Veggie Stews

the OL, is a vegetarian, so i'd like to find some stews or soups that i might eat, and find good.
she's made some veggie lasagna n the such, and they are good, but looking for a good veggie stew that a meatatarian might like.

I make a veggie stew usually once a week.
I saute some onions, garlic and mushrooms. Then I will add black, pinto, cannelli or garbanzo beans (or all of them!). You can add squash, eggplant, tomatoes, sweet potatoes, carrots... anything you want (usually depends what I have on hand). I will add quiona if I don't plan on putting it over rice. Add enough veggie brother or water. Let it cook itself for 30-45 minutes. I top it with avocado before serving. The possibilities are endless, I've made this probably 25 different ways.
It's really simple to make and always gets great praises at my crib!

Try this recipe without the beef.
