They don't, they are just trying too hard to give a "New Orleans" answer.

Gotta add ABT's to the list of favorites.
I just finished stuffing about 80 jalapeno halves with smoked pulled pork and a cheese mixture with cream, cheddar and mozzarella cheeses, garlic and a lil of my Cajun seasoning. After chilling overnight I'll wrap the with bacon and grill 'em to bring to a party at the beginning of the Endymion route.
Oh, I'll probably glaze them with a sweet & hot sauce I'll whip up in the morning.

That is why it is advantageous to have a go to spot near the route, fall down enough times and you are at the doorstep.

Every year my bday fall nears Mardi Gras. Doughnut King cakes in the shape of the age I will be.

Popeyes is a staple though.

Is the correct anwser pork?

Got a new must have food for Mardi Gras, Kastle Burgers. One of my aunts brought about 50 of these things out yesterday and keep them warm by sticking them in a crock pot. Great for parades. It will be in our Thoth spread for many years to come.
