Anyone know? If I am in unfamiliar water, can I track my trip fron launch so I can find my way back?

Just ask your guide for the GPS coordinates.
You don't have to be all sneaky about it.

Hand held GPS drop a waypoint at the launch, and another at fishing hole.

I wouldn't keep that information stored, because that's the first place the claims adjuster will go when your gun boat sinks.

I use flytomap marine GPS app for La-Ms-Al. You can drop a marker or track your route. It's cheap and works well enough for me.

i have one on my Iphone that I use to track bike rides. it is something like NIKE+ gps. it was free i think. it tracks mileage and route and speed. no reason it wouldn't work on your boat.

I use Motion X GPS on my iphone. You can mark waypoints, record/track routes, and view the aerial maps. It works for me. Just make sure that your phone has a good charge on it. It will kill your battery in a hurry.

If you really want it for your boat any hummingbird with gps will do this if you have the track turned on.
