I've been tasked with locating a reasonable electric kitchen knife sharpener that won't damage a set of knifes (Wusthof, Henckel, etc). What you got OB?

I have a Chef Magic. Not sure what damaging knives is about. It gets them sharp.
I did the lansky and diamond stones and other sorts for years. This gets them sharp and quickly.

I would like to try that one. Everyone that has it loves it.

I'm told the set of kitchen knifes we have are pretty nice - I'd hate to frick them up. I'll take responsibility for my hunting knives cuz they're mine. The kitchen is not my turf.

Got mine from cabelas. They have a few different styles. I got the cheapest.
I think they even make one for serrated blades. Not sure how that works.

Chef choice
Looked at their web page. They have one that does different angles depending on the style of knife you have. May be something to look into.

I took three hours when I first got it to sharpen every knife one afternoon. But after that 10 seconds will get it razor sharp again.
I sharpen my pocket knife daily with it. Even the Mrs can use it.

Sounds like I will be off the hook after the first sharpening session then!

I'm not disagreeing with ya but I can't eyeball it before I buy it. That's a key component of my decision criteria.

Edgecraft is the lesser version made by the same people that make chefs choice.
They are able to make it cheaper though because they use 2 stones and a steel vs. 2 stones and a strope.
The strope is the super fine polishing step of the chefs choice and will put a finer sharper edge on a blade than the Edgecraft. For kitchen knifes I would (and did) buy the chefs choice. For just hunting knives you can get away with the edgecraft.
Interestingly Edgecraft is the parent company for both.
