Question about my smoker

I have had a Masterbuilt gas smoker since Father's Day. I have used it several times, however, the last 2 times I used it, once for chickens and then today, for baby backs, I have gotten a black, soot-like film on my meat? I thought the first time was because my gas was low and the burner produced more soot but the bottle was full this time. Help please?

Not sure about that.........I've never used a gas smoker.

Maybe crank it up real hot and try to burn it out. Idk

Thanks but I tried that initially, cranked the heat up on hight for an hour, trying to burn it off.

Your air gas mixture may be off. Is there a shutter to manipulate to allow more/less air in?

I've manipulated the air flow, from top and bottom, as well as gas flow with no success. I'm clueless. The smoke and temp. look good but I have this soot on the meat. It still taste ok but not as good as pure smoke. My gas flame is a little more yellow than I like but I'm not sure how to control that on my burner.

Gotta be the burner. Has to be some way to adjust it. Its your gas / O2 mixture, but nothing to do with your air or air flow. Its all in the burner. needs to be cleaned / jets rodded out / some kind of adjustment on mixture.

There should be an adjustment (regulator) on the gas line. Play with it, try to get a nice blue/green flame.

Does the flame itself give off smoke (soot)? Without chips in the smoker?

Thanks Outdoor Chef, I was kind of leaning this way, but wasn't sure why it changed suddendly. I'll check it and make adjustments. Perhaps something fell in the burner and is stopping the gas or air flow. Thank you for the advice.

I haven't checked the flame without any chips in. I'll definately check that. I've tried adjusting the regulator and vents with no luck. I haven't looked at the bottom burner as much as I should tho. Is the inside cabinet painted? Any sign of paint peeling? Definitely check the burner characteristics on a dry run. Excessive yellow flame and you may have a problem with the burner mold itself. Is their an air shutter adjustment on the hose to burner connection? If so try to adjust to get a blue flame.

Try those things and try a burn out of the cabinet (highest temp you can reach, all dampers, doors closed for an extended time.) Good luck.

Have you tried contacting Masterbuilt. Most products like that have a forum for their products.
