I brewed AHS Texas Blonde Ale and then put five pounds of frozen strawberries in the secondary. While it was in the secondary, I lowered the temp on my fermentation chamber to around 50 degrees so that it wouldn't ferment any further. I thought the beer came out good and my wife liked it.

I read that if you allow it to keep fermenting it will come out more tart and dry.
