Gumbo in the oven

So, I wanted to cook a big hen and sausage gumbo for tonight, but had lots to do today and wanted to hunt this evening. I started it this morning, just like any other, then put it in the oven at 325 around noon, took it out if the oven at 6:30 after the hunt.
It was fantastic.
If you are ever in the same situation and can't watch over your pot, try it.
