Duck breast recipes

Got some fresh breast in the freezer this weekend. I've never cooked duck before and I'm looking to venture out.

strip em, salt, pepper, garlic, flour, hot grease. fry em just like deer steaks,,, or gumbo, or fill up cavity with dirty rice and bake.. i prefer fried duck strips..

Has anyone heard of soaking in coffee to get the "game" taste out? I like the game taste, but my wife doesn't. My buddy brought over some duck breasts the other day and we made some duck bombs, and he had the soaking in coffee. First time I've heard of it, but it worked.

Momma always soaks the deer steaks in milk to get rid of some of the gamey flavor that she doesn't like
