Wife came through with an 8 inch Dexter Russel for the anniversary. Its been through a few dozen reds and a pile of trout and is losing its pop. Dont want to jack it up though.

Only use them for reds, but we use those hand held drag across sharpeners. Gets a good enough edge for that use.

I love mine. Gets any knife of mine shaving sharp.

Wustoff Precision edge sharpener for $20
I use this on all my knives, including filet. I sharpen them almost every time I use them, especially when I clean a redfish. Great edge, perfect angle.
Sidenote: Use game shears cut through those first 3 or 4 ribs on a large redfish. You can thank me later.

A course stone, a good steel, and the top of a work boot

I like the looks of that setup. Got a Chefs Choice, but that looks good.
How easy is it to change coarseness.

Takes 10 seconds tops. Just push spring down and slap a new belt on.
