I'm not vegan and don't cook vegan dishes, specifically, but you can roast a lot of vegetables, particularly root vegetables for good meals in addition to making soups with them.
You can make veggie stuffed eggplant, peppers, mirliton. Quinoa is a good sub for rice to change things up.
That's about all I got.

Not sure if you're serious.. but if you are:
Pasta Fagioli - very healthy and has protein.
Boil a pound of tubettini pasta
Can or two of Chili Beans from Whole Foods, rinsed and drained.
Couple tablespoons of olive oil.
Coupla tablespoons of Pesto sauce.
Salt and black pepper.
Top with Parmesan cheese.
You can add sun dried tomatoes, cooked spinach, artichokes, olives.. whatever turns you on.
If you like meat, you can add sliced prosciutto or ham.
