I know falconers have this ancient view of the sport where there must be apprenticeships and whatnot and it's supposed to be secret knowledge and wizardry but that world is gone.
Oh, and no.
The whole apprenticeship thing has nothing to do with secrets and wizardry. Falconer's were perfectly happy not to go through that crap for many decades. But then, the federal government decided that it should be regulated, since birds of prey are protected now. To keep ignorant people from catching, and inadvertently killing hawks, they decided that each new falconer would have to have a sponsor that knows what he's doing. It's that simple. It has nothing to do with secrets and everything to do with education before setting a new falconer loose with a hawk.

Have you seen the YouTube videos of the golden eagles wolf hunting in Mongolia?

Yep. Those are powerful birds.

Haha, really? I didn't know they'd take on a squirrel. Would have liked to have seen that. Squirrels can be tough on even a big hawk. They've got a nasty bite.

He's been bird watching for a LONG time and can spot a MS Kite out of the corner of his eye at a distance. This one grabbed the squirrel off a limb right in front of his truck while he was bird watching and landed in the water about thirty yards in front of it. It struggled to make it the short distance to the water with it then just basically held it down till it quit kicking and slowly worked his way back up on land and ate it.

That's awesome. I've heard of some hawks doing this, but I never would have expected it with a Miss. Kite and a squirrel.
Also, not saying it's the case with your friend, I've seen a lot of birdwatchers that think they know what they're looking at, but really can't tell a golden eagle from a kestrel.
I don't know a ton about Miss. Kites, but the bulk of their diet is insects.

And what's not is very small reptiles, amphibians and birds. The number one resource for Ms Kites eating squirrels is Tiggerdroppings.com.

It was likely a cooper's hawk or a red-shouldered hawk.

Maybe, but a cooper's with adult plumage has a lot of gray on it.
