How big is Parish Canebreak? Is their operation smaller, they don't produce as much of it, and it's easier to nail down smaller batches?

Size has nothing to do with quality.

All of these places have smaller homebrew sized setups to test things out on. It's beer, not rocket science.

They both use 30-barrel brew houses.
