I am craving chicken salad, but I'm not a fan of mayonnaise. Usually when I make it I use just the bare minimum to bind everything together, but I think I'd like to try something a little different with different flavors. Any go-to recipes that y'all use?

Let's talk about this with Dr. Zach. First, were you ever beaten with a jar of Mayo as a child by your mother?

instead of mayo try:

1/4 cup plain Greek yogurt or sour cream (whichever you prefer .. difference in taste is obvious)
1.5 tsp honey
1.5 tsp mustard (dijon)
salt & pepper

I've used a mixture of fat-free cram cheese and fat-free ranch dressing, and i've also used a mixture of fat-free sour cream with a little Zatarain's creole mustard.

I don't know if that would work for you, as i was actually trying to imitate mayo without the fat (fat free mayo is gross) ... but you say you don't like mayo, so i dunno.

Anyway, just throwing stuff out there.

I don't like mayo in my chicken salad. I use this recipe all of the time; it is a great no-mayo option: Italian chicken salad..

After reading some of these responses, I actually had to double check and make sure I didn't accidentally post this on the OT.

And Dr. Zach, I wasn't beaten with a mayo jar. However, I used to go grocery shopping with my dad and he hated mayonnaise so much that he wouldn't even walk down the aisle because he was afraid a jar would fall off the shelf and break, splattering him with mayo. Maybe I was conditioned to dislike it as well?

Insert a mixture of plain yogurt (Greek style) and sour cream where it call for mayo. The "culture" elements of each will provide a bit of pleasant acidity to the sauce.

Just make your regular chickan salad and use lite sour cream as a substitute.

A lot less fat, less greasy feel on the palate.

Here's a good sauce to use.

Mix an egg yolk
A tablespoon of lemon juice
A cup of vegetable oil
A pinch of salt and pepper to taste

Blend until smooth and enjoy!

This is a good start. Let's go with this flow. Did your dad ever threaten your mother with a jar of Mayo when you were very young?
