Cdn geese much closer to snows than specks in taste as said earlier – up here I make a gumbo or if its a young bird I will grill breast on BBQ. Smoked is not bad either for a young bird. Never try and pluck they are a PITA, just fillet the breast and save legs for a gumbo – makes a good gumbo w/ smoked sausage, just a little hard to find tasso up here
