Grateful Dead, Pink Floyd, and Led Zeppelin. I think Led Zep was the first band I really got into in a deeper way, and then the rest followed. Went on a Beatles kick for a brief moment, but that got old pretty quick. The Allman Brothers have always been pretty prominent in my music selection as well. Right now I mainly listen to the Dead, Fleetwood Mac, and Dire Straits.

The PO-lice. Can't really say why.. they were in my wheelhouse as I was forming a music "consciousness" I guess. The lyrics on much of their first 2 albums and Ghost, especially the b-sides, are pretty deep and introspective (at least I thought so at the time). Coupled with a very unique sound the band had.
