Hot, hot pan with 1 or 2 Tbls olive oil/ butter mix to sear the exterior to caramel brown crisp then remove from heat. Toss in fine sliced shallots to brown, finish your pan with a little citrus or white wine. Reduce. Add pat of butter and pour this sauce over cooked scallops. 10 minutes to cook. Then take off her clothes.

Season with salt/pepper. Tablespoon of butter, tablespoon of olive oil, over high heat...sear scallops for two minutes, flip, sear one minute, rest. Serve.

Scallops can be intimidating, but are really one of the easiest things to cook.

Dice and render off some bacon in a hot skillet. Once it starts to crisp up, add a couple of minced shallots (not green onions, SHALLOTS!!!). Have your scallops clean and dry with salt and pepper added. Toss them in the pan for maybe 90 seconds a side until there's a nice sear. Finish with some olive oil and fresh basil and toss in some (pre-cooked) angel hair pasta. If you need to moisten it, add a little of the water from the pasta... Finish with a dollup of butter. :wood:
