I'm planning on grilling some jalapeno and cream cheese stuffed, bacon wrapped, marinated (in Italian dressing and Sweet Baby Ray's) duck breasts for the Oregon game. The only place I've been able to locate duck breasts is at Maxwell's and they are larger than I would like (4 breasts/ almost 2lb package).

Is there anywhere else is Shreveport I can find some duck breasts and is that the average size I should expect for the breasts?

Yeah, I know it's not the fancy schmancy way to cook duck (which I would love to learn, by the way), but it's for a football game so I'm not going to fret over it. It will be tasty, which is the most important thing. I do the same thing with shrimp, and with venison backstrap and it's excellent.

I've had dove breasts and teal breasts done this way too and they were excellent, but I've never done duck (or any poultry) myself this way.

I've learned that when you come here with simple wildlife recipes you will get scolded. It's all a matter of availability IMO. I love bacon wrapped duck breast and deep fried flounder but to people that rarely get this stuff that could be seen as horrid I guess

Teal = duck

Exactly. We cut the breast up in slices about 1" x 1" x 3"

Got to if it's gonna be a finger food or app. I have been contemplating what to make with duck on gameday myself. Was thinking more like the main course tho.

No doubt it will be tasty, and I have no problem with anyone doing the bacon CC jalepeno thing. It was just funny that he broke like all of the food board commandments.

If you find yourself east of Monroe and got a hundred burning a hole in your pocket, I'll part w/ a gallon zip-lock of duck titties.

Yes. That's my plan in the event I can't find them smaller. I know it probably doesn't make much difference; I just prefer the smaller whole breasts. I don't like cutting my meat anymore than I have to.

And yes, I realize I broke all the commandments, but I have no shame in my cooking. I cook what I like to eat, and for gameday appetizers this seems perfect.

Still struggling with a main course. Duck and sausage jambalaya? Gumbo? Sauce piquante? Maybe roast some duck?
