I have this beef roast that has been in my freezer for about a year, but somewhere a while back I took it out and let it thaw overnight because it is huge and then had to leave for a few days so I threw it back in the freezer.

Is it safe to thaw out and eat a second time?

Despite what many folklores/wivestales will say- it should be fine bacteria wise as long as you cook it. Assuming a roast will be slow cooked for hours, yo are fine.

If it will taste good.....mmm.....maybe not. Better bump up cook time and seasoning

I think it will be fine, but after being frozen that long, likely the quality has suffered a severe blow.

Give it to the dog. If you don't have a dog, give it to the neighbor's dog.
