Homemade Chow Chow

Anybody know some good recipes for this. I had a red chow chow and green chow chow, both were homemade. Both were amazing over a plate of rice and gravy. TIA

My dad's mom made some great chow chow. I never got the recipe.

1 Green cabbage *(see note) 10 C 6 qt
2 Yellow onion* 4 large
3 Carrot* 3 each
4 Bell pepper* (either red/green) 5 each
5 Jalopeno (minced) 3 each
6 Apple cide vinegar 1 G
7 Sugar 1 qt
8 Salt 1/2 C
9 Turmeric 2 tsp
10 Pickling spice (in cheese cloth) 4 T
11 Red pepper flakes 3 T
12 Fresh ginger 1 knob (split)

Method Used For

*(Shred these using RoboCoupe RG2 attachment)(grater attachment for food processor)
1. Mix all prepped veggies (only) with all salt. Allow to sit for 1 hour.
2. Bring vinegar, spices, sugar, and split ginger to a simmer and cook 45 minutes.
3. Drain veggies throughly. Remove ginger and spice bag from mixture.
4. Add veggies to liquid and bring to boil. Turn heat to low and simmer for 30-45 minutes.
5. Remove from heat and pour into 400 pan to allow to cool.


This is my recipe from work and quite a large batch. But you get and the idea.
