1st night Simple fare, as they will have been traveling and won't appreciate a damn thing but food in face. Go with a cassoulet(white beans with duck breasts and sausage).
2nd night Time to pull the gloves off. Yet keeping it simple none the less, and as the price is cheap. Crawfish etouffee.
3rd night Must break a sweat sometimes, so out to the grill you go(remember hydrate), assuming a table of four bigassed ribeyes, grilled asparagus and corn.
There is half the week, I'll be back tomorrow to finish it off.

Etouffee is simple, and with fresh boiled crawfish for fat, it delicious this time of the year. and even better when cooked a day ahead of time
