I'm not sure why you don't want to list mainstream movies.

Because many people already know about them, trying to find hidden gems outside those that are mainstream

"Constant Gardener" is a really excellent movie.
"Big Night" is great, and guaranteed to make you hungry.
"Sweet Land" is a movie I've recommended to a number of people and they've all loved it. A couple bought a copy.
"Sophie Scholl - The Final Days" - very good movie about a famous Nazi Resistance group.
"Katyn" - Polish movie about the slaughter of their soldiers in WWII.

i agree with leaving off mainstream movies.. this should be about the ones we watched on a whim that are worth suggesting to others..

Exit Through the Gift Shop (2010) Documentary.
Don't just add this to the list, go watch it now. Easily in my top 5 movies of 2010, and the best documentary I've seen since King of Kong.

I'd add the Doc "Off the Grid: Life on the Mesa" and "Man from Earth" maybe under Sci-Fi.

Watched Exit Through the Gift Shop last night. Was good, but I don't know if it's quite worthy of the praise (97% on RT). The first half was just kind of boring, second half really good.

Documentary- Off the Grid: Life on the Mesa. I heard about it from a thread on here a while ago and watched it. Pretty darn interesting, and not too long so it's an easy watch. Basically people who say F it and just live out in the desert in their own little community.
