I read somewhere to salt your eggplant slices and let drain in a strainer for half an hour. This draws out the moisture.

I tried it a few times and they seem to be alot less soggy than the eggplant I used to fry for my eggplant parmesan

Soak in salt water first is better.

My neighbor disolves a little corn starch in the egg batter, I might try.
