Close to mine, but I use a lot of green onions rather than onion. I also use celery. I like the added crunch.
If you're ever passing through Boyce, hop off 49 and hit Uncle Albert's for great fried chicken and potato salad. Before the former owner retired, she told me she uses some sandwich spread in the potato salad along with the usual ingredients. I keep forgetting to try that. Her niece bought the business and runs it now.

I do, too. It seems like quite a few of the people on this board seem to be afraid of crunch in their salads, though. I tried Calvin's chicken salad one time, expecting something sublime after all the rave reviews on here, but found it was more akin to chicken paste.
