Cooking Meals For One

Wife and Kids on a trip with the in laws that I had to miss due to work. I am drawing a blank on what the hell to cook for myself without a ton of leftovers.

Any of you guys have some fun smaller recipes that I could enjoy making wile having a few beers tonight?

Steak and whatever sides you want to go with it. Pasta, potato, veggies of some kind. All stuff easily bought in "single serve" portions.

Start with an 8” tortilla.

Choose a sauce, like pesto, chimichurri, pizza sauce, garlic sauce, or olive oil sprinkled with grated parm. Spread 1/2 as much as you think you’ll need.

Choose a cheese, like shredded mozz or fresh mozz, or a blend of your faves.

Add your toppings. Look in the fridge and pantry for interesting additions.

Bake in air fryer or oven for 10 minutes or so, till bubbly.

Enjoy.

Steak as mentioned, can use leftovers for fajitas
I usually make a normal portion of something I like that my wife and kids don’t like as much and plan on eating leftovers the next night.

Agreed on steak. I buy a really good filet, sear the p*** out of it, and enjoy the heck out of it.

Or I go out.

I'd prepare something my wife doesn't care for... some type of sushi or ceviche.

Like already mentioned, beef steak, filets of salmon and tuna grilled along with some fresh vegetables.

Make a small pot of some sort of soup like Broccoli/cheese, potato/leek or tomato soup. Have that with a grilled cheese sandwich or make tuna salad.

A fresh vegetable salad of lettuce, carrots, tomato, cucumber, celery and maybe some black olives with your favorite dressing is refreshing and filling. Throw in some cut up boiled eggs and ham and you have a full meal.

Grilled shark is good eating. The meat is white and firm and the bonus is no bones to deal with. Just skin it and cut the thing into steaks.

I use the same basting liquid I use for redfish on the half-shell----butter, garlic, green onion, parsley, lemon juice and Worcestershire sauce simmered down for about 10 minutes to blend the flavors before basting.

Add in a night of takeout.
Also cook something you really like and have leftovers if needed.

My wife has been gone several times this summer for conferences.

I have made a version of Red Beans/Dirty Rice and my Spaghetti...Spaghetti with Cream of Mushroom Soup and Cheddar Cheese.

Ha ya got me boss. I need to pay closer attention when they're on the sale rack I guess.

All kidding aside, The Butcher Shoppe in Pensacola is da bomb. Wish I could shop there more often.

Agree with this, The Butcher Shoppe is an absolute go to when in the area. Australian A9+ wagyu, duroc pork, and a bunch more. Kevin there is a class dude.

I'd lean towards the dining out option, and try new places. It's probably even cheaper to do so, than grocery shopping per meal.

Buy a plate lunch for lunch and eat the rest for supper. Most places put enough on them to eat twice.
