Will be in Park City for a wedding 9/30 and staying an extra week. We have been to SLC and PC multiple times but looking to see some sights in other parts of the state. Active couple, no kids. Looking to hike and explore and sightsee … but nothing extreme or overnight camping etc. Any recs or ideas greatly appreciated!!

perfect time for Moab area (canyonlands and arches) but it will be super crowded. Zion too.
depends on how far you want to go but capitol reef and Bryce are both incredible and likely not as crowded

also the drive on Utah state highway 12 between Bryce and capital reef is to this day the most beautiful drive I’ve ever done
if I was only doing one thing in Utah it would be that

Maples might be starting to turn by early October. Maybe a good time to stick up north and explore.

This would be my itinerary for a week long highlights of Utah trip-
Saturday - arrive, stay in SLC and explore the city
Sunday - Drive to Bonneville Salt Flats (4 hour round trip), fit in Homestead Crater if you have time, stay in SLC
Monday - Drive to Moab (3 hours), stop by BYU on the way - beautiful campus and hiking the Y is a cool one if you enjoy late night CFB, stay in Moab
Tuesday- Arches national park for most of the day and a brief stint in the Island in the Sky section of Canyonlands, stay in Moab
Wednesday - Drive to Capitol Reef national park, stay Capitol Reef resort right outside the park. They have wagons and teepees if you want a unique glamping experience.
Thursday - Drive scenic I12 to Bryce Canyon, explore Bryce the rest of the day. Stay at a hotel right outside the park. Bryce NP is must see at night.
Friday - Drive to Zion and spend the full day in Zion. Stay in the Virgin area. It’s very close but generally cheaper than Springdale which is right by the park.
Top trails for a healthy athlete looking to avoid any dangerous trails. (This sounds your speed based on the no camping, but correct me if I’m wrong. It’s not a diss either. This is the category I put myself in.)
Arches NP - Balanced rock, double arch, sand dune arch, and Delicate Arch
Canyonlands - Mesa Arch and upheaval dome
Capitol Reef - Hickman natural bridge
Bryce - Bryce is mostly overlooks, but Queens Garden and the Navajo Loop may be the best trail in the world
Zion - Emerald pools, riverside walk up to the narrows

We did the Utah 5 National Parks 2 years ago - Zion to Moab via Hwy 12 for part of the way. Great drive.
A cool place to stay is The Lodge at Red River Ranch near Torrey - which is near Capitol Reef NP. They close for the winter but may still be open in Oct.
My regret about that trip is not renting an off road vehicle or taking an off road vehicle tour in Canyonlands or Arches. You can find videos on line about that. I think you can also do the same type of off road vehicle activity in some state parks near St. George.
I’ve was told there is rafting on the Green River but do not have personal experience.

Then you're missing out on the best thing to do in that area of Utah. Camping in the Uintahs is some of the best you'll find. And there's a lot of green this year so this will be a great fall for the colors though you may be a bit early.
The Park City wine festival is October 6-7

Went to Goblin Valley and Capital Reef last October. Stayed in Hanksville. Amazing part of Utah. Just otherworldly. Factory Butte is a pretty cool site/area as well.
And fwiw, I was in Zion and Bryce the October before and they really weren't that crowded.
