Friends,

This evening I returned home from a fifteen mile flanerie to find a boxed pastry gift from Uncle. He or his secretary had brought over two beautiful cannoli from Brocato's. Attached was a note apologizing that he would not be here this weekend as he is fishing a large tournament in Destin. Disappointed I was not invited, I enjoyed the cannoli and began to prepare dinner tonight.

We still have at least twenty pounds of dolphin in the fridge, and what I do not eat tonight I will freeze. I took out a large 1 lb 12 ounce filet and grilled it unseasoned.

While the dolphin cooked on low on the grill, I tossed half a pound of lump crabmeat on the stove, with 2 tablespoons of butter. Into the mix were three dashes of Old Bay and a squirt of Sam's brand mustard that had fresh mustard in it. I returned to the grill and the fish was finished. After removing the skin, I topped with the crab butter sauce.

The dish looked quite beige and ordinary, so I looked in the fridge and Mother did not forget my wasabi tobiko nor my salmon roe. This caviar really brought the dish together chromatically. What is most fascinating about tobiko is there is an entire underground cult of people who make and watch autonomic sensory meridian response (ASMR) videos of nothing but people eating tobiko. Apparently, the sound of squishing flying fish eggs sends a tingle down some spines. It does nothing of the sort for me, but I do enjoy its oceanic umami. Do not worry -- I splashed the top with a few drops of Great Value soy sauce. Excellent!

There is no evidence that Jesus was a saltwater fisherman. His life and ministry revolve around the Sea of Galilea and Jerusalem. While you might assume because it is named sea that it is saltwater, the Galilean Sea is actually freshwater, as it is fed primarily by the Jordan River, which flows, like the Nile, from south to north. Most Near Eastern and biblical scholars speculate, based on bones found, that the Galileans subsided primarily on tilapia, carp, and catfish.

My Sunday School teacher taught us that Jesus ate tilapia. I had my doubts at the time, as this was in the 90s when tilapia was new to the menu in many restaurants and there was a national push to make tilapia a regular component of the American diet. I put two and two together and deduced that saying Jesus ate tilapia was a propaganda tactic to sway both Catholics, mainline Protestants, and Evangelicals to eat tilapia. It was only later, after reading a book on Near Eastern archaeology that I realized my Sunday School teacher was right.

Many people on this board look down on tilapia, possibly because it is farm raised, or more likely because it is cheap or because it somehow became part of the food snob’s code of ethics to denounce tilapia as a tasteless fish. But I like it and will not hesitate to get it, even at Impastato’s, where redfish and speckled trout are other fish options. If it is good enough for Jesus, it is good enough for me.

Mother is in her 60s, and I suppose you could say I am retired. You may or may not know that I spent a year as a conductor of the St Charles streetcar. Since then, I have had several itinerant jobs, but each job interferes with my calling to observe, document, and teach on TD.com. One day, I will get my poorboy tour bus operational and will invite all my friends here to join me on the inaugural run. Perhaps you will join us and regal us with your Showbiz stories?

As for confession, Jesus taught us how to pray, and he taught us to pray always. If we look at the Lord’s Prayer, we see that we are to confess each time we pray, so you do not need to wait to go to a booth to confess your sin. At the dinner table or at the foot of your bed, pray always, ask for forgiveness of our debts or trespasses, and our God, who is faithful and just, will forgive our sin and cleanse us from all unrighteousness.

Uncle goes over the I-10 Pearl River bridge to get to Destin. Occasionally we would drive past the old Tally Ho and cross the river on the Highway 90 bridge, but I am told it will be closed for the next three years for repairs or replacement. My fear of bridges has improved through the years, thanks in part to exposure therapy performed on the Danzinger, but I still take a Benadryl or two if I am going to be on a large bridge like the one about which you asked. The Huey P or the CCC are exceptions and I have not crossed either in a very long time. The spirits are too strong there.

While I warmly welcome you for the poorboy tour, there will be a strict no drugs, alcohol, tobacco, and guns policy. Anyone caught with or under the influence of any the above will be disallowed from continuing the tour, and risks being banned from future tours unless it has been shown he or she has been reformed. Women and men who have sold sex will be welcome on the tours in the same manner that they were allowed to join Jesus’s disciples. Repentance comes first. We hold against no one the sins of their past.
