How to not overcook crawfish

If boiling a sack of crawfish, how long do you cook the crawfish after the seasoned water comes to a boil, how long to soak?

Boil til they rise/float. Soak til sink

Also, sample a few after they've been soaking for a while to see how they are taking the seasoning while checking for doneness.

Naturally, smaller crawfish will overcook faster than large crawfish, so get a sampling of various size crawfish when you do the tasting.

This. I start tasting at 30 min soak and soak as long as it takes til I’m happy with em.

Your water doesn’t have to come back to a full rolling boil. I wait for little bubbles and a little foam on the top then I cut the fire and soak for 25-30 minutes.

Depends on the size. Early in season when they’re small right before they hit rolling boil. Midsize around rolling boil. Late in year dark hard ones 5 min rolling

I just wait for steam to come out the lid, then drop ice on them and let them soak.

Don’t bring them back to a full boil. I dump them in and heat till it starts to smoke a little then soak till they sink and taste right.

I drop into a rolling boil, lid the pot, and count 3 minutes after I first see steam escape. Then I cool the pot enough to allow for a 20+ minute soak. Pot never returns to a boil.

Yep. Lid stays off during soak. Stir a few times during the process.

30 to 45 minute boil, soak until the pot is warm to the touch.
For one sack, 5 bags powder, 3 large bottles liquid, 10 lb ea of onions, potatoes, lemons and sausage. 5 lb oranges, mushroom, carrots, bell peppers, celery, sweet potatoes, frozen corn (for the soak), 3 pineapples, 8 cans green beans and asparagus, 5 dozen boiled eggs, twin pack of pork butts from Rouses, 1/2 box salt.

Once it starts boiling, cut off the fire.

ETA: this is the way. when I say boil, I mean I cut off the fire as soon as I start seeing steam rise from the pot. It's not a full rolling boil.

I go for 3 minutes of rolling boil, cut the fire, then cool with ice.

If you don’t use ice, cut the fire at first sight of steam.

Roughly negative 1 minute or so.

Same here. Smaller crawfish I'll do 2 minutes. I do most of my work trying to cool the pot after. Having the pot by a drain is great for this. Hose and mix with the paddle and I'm done
