My favorite is pulled pork chimichangas. They must be made with a Carolina bbq sauce. We based them off TJ Ribs chimichangas
(Not my photo)

We also make pulled pork Mac & cheese, pulled pork stuffed sweet potato, and of course sliders with Hawaiian rolls
(Still not my photos)

Pulled pork quesadillas are quick and delicious. Cover it with spicy salsa and a touch of sour cream. Fantastic.

The Cajun Ninja's baked Mac and cheese recipe is an awesome side for pulled pork

Eta: I'm dumb. Thought you meant sides to go with pulled pork.

I’d think that the pulled pork sweet potato is weird, but whenever I do pork chops or pork tenderloin, I generally always do it with sweet potato. Thats an idea id like to try.

I don't know what those are but it isn't chimichangas. And Carolina BBQ sauce? GTFO. Reminds me of gumbo people from Indiana make.

Taco soup and chili in the winter, use the aforementioned 1.5# vac sealed bags from the freezer. I only do SPG and no sweet sauce on pulled pork that I plan to use for savory dishes.
