Lotus of Siam - the best Thai restaurant
You can find outstanding restaurants at just about every one of the major resorts on the Strip, and sometimes more than one. What kind of food are you looking for? If its steaks, then there are at least 25 restaurants from which to choose. In your hotel room there will be magazines that list most of the restaurants in town, and their price ranges. You can use those as guides. Unless there is a major convention in town you can usually get in any restaurant without reservations on week nights, but its best to make reservations on weekends.

If wanting great hot-dogs and sausage-dogs, try Jodi Maroni's in NYNY, and if wanting great footlong monster subs for $10, try Capriotti's on West Sahara right off the Strip.

I 2nd Capriotti's

As for fine dining I'd recommend(just places i've tried and enjoyed):
Prime at the Bellagio
Bartolotta at the Wynn
Sushi Samba at the Palazzo
Cut in the Palazzo
And of course Burger Bar at Mandalay Bay

ETA: Prime and Cut were pretty big splurges, but the rest were decently priced for vegas.

We enjoyed Burger Bar, and it's a big burger and great fries, easily enough to split with someone else. Almost went for the Kobe, but chose Angus.

Perfect idea for when you are wasted and broke. Always a must in Vegas. We had a blackjack dealer there with half of an index finger too. She nubbed the cards to you. I will never for get her....

+1 this place is awsome. Night club feel with great food. Plus the waitresses are

Also the Bobby Flay's Mesa Grill (at cesars) was good as well. Hard to go wrong in vegas.

burger bar is good, mandalay is a great place to stay. I love the steaks at gallaghers at New York New York but thats just me. One thing there are tons of great restuarants, you can't miss out but you MUST go play the plastic ponies at the MGM grand.

Okada, in the Wynn, was outstanding.

And the bone-in ribeye I had at Del Frisco's the last time I was there might be the best steak I've ever had.

ETA: Also, the manager of Del Frisco's Vegas, Kim Owens, is a Louisiana native and loves meeting people from LA who visit.
