Pretty sure there were rumors of normal people that tamed dragons back in the day
There was also a mention of a water dragon that was killed by a Greyjoy

I don't believe Netty/Nettles was (or at the very least it was unsure whether she was) when she tamed Sheepstealer.

The only thing I know is that GRRM has said that the 3 heads of the dragon don't necessarily have to be Targaryens, so that gives me hope that at least one of the dragon riders will not be Targaryen.

Nettles was a dragonseed
It might have been unclear in the Princess and Queen, in WOIaF, states that she was seed of the dragon. Page 81 list that all of the non-Targaryen dragon riders were dragon seeds.

There were multiple families and I believe they're all descended from Targs.
I think Stannis' grandmother or someone before her was a Targ

The Baratheon house was created by a half related Targaryn, but I don't think that means that everyone was Targ related

IF you had to pick or bet money on who would show up in the show would it be LSH or Benjen?

yep I just read it saying there were 40 families trying to rule the Valyrian freehold, but it only says the 3 families above survived the Doom. So I have no clue

A lot of people are thinking he may be the guy in Jon's boat, but that could just be a guy.
I've been thinking about the "Mother Mercy" title which could mean so many things. Brianne mentions Cat every time she's on screen, Sansa says my mothers dead (along with all her family), Tyrion brought up Thoros this season.
If they were never going to have her why do the Beric/Thoros scene? Why not just let him die against the Hound?
I think that because they're are only 2 episodes left I know I'm gonna go stir crazy

I agree with you, in principle, but there is another possibility - when we last saw folks, they were on the brink of death, presumed, dead, etc. - and the list goes all the way back to Waymar Royce - not all of those folks are most sincerely dead (LSH, for example, in the books) - but the most notable is obviously Jon Snow. If everyone assumes that he is either not going to expire or expire and have Melisandre bring him back - Donderrion would be necessary to establish this sort of resurrection is within the power of the Lord of Light's agents.
