I've used 5 per person from San Antonio to Washington DC...

I always do 5 pounds per person and rarely have much leftover but when I'm contracted for a certain number of people it's my responsibility to make sure we don't run out. I do have customers that will request less or more per person or a certain number of pounds, then it's on them....
