firstly Tabasco vs Crystal/Louisiana/Trappys cannot be compared to each other. Even though they are "hot sauces" they are totally different. I use both Tabasco and Crystal/Louisiana....

for smoking brisket have a little of charcoal on the bottom, however use hickory, or pecan chunks, or the little logs that academy sells in the back with the grills. If you use the little logs, make sure you split them up in half or quarters....

Also if you want uptown, Cannons has a nice turtle soup and blackened redfish. But its always nice to go to Paquels Manalies (spelling?)...
