I have found that a double fry is the way to go. 1st fry at 225-250 for about 20 minutes, then let them cool for an hour (you could also refrigerate or freeze for later at this point) 2nd fry at 350-375 for 7-10 minutes, just to crisp, they should be cooked already from the first fry....
