Short vacation

Me and the SO found some drug money laying about, so what are some suggestions for a vacation 3-5 days for about $2000?

I've read suggestions of Fredericksburg, TX and I thought "yuck." But after looking into it, I'll be damned if I don't want to go there.

What activities do y'all want to do on the trip? You've got a pretty wide open range you can do with that amount of time and budget, without spending too much travel time.
We are planning to do something similar soon as I have some miles to burn and owe my wife a trip. We are heading to Belize, most likely. We can leave MSY early morning and be on the ferry to Ambergris Caye before noon. Hotels/condos are pretty cheap and food/drinks appears quite reasonable. This was chosen, because we wanted a quick trip to just lounge and maybe do some fishing - not much else. This could easily be done on your budget. We aren't paying Airfare, but I've found numerous places to stay for <$150/nt.
