Seeking Vacation Recommendation for Easter 2017 (Husband, Wife, and 5 year old)

So the wife just mentioned that she would like to do a family vacation for Easter 2017. Normally we take big family vacations where either my or her extended family go also. Since it will just be the 3 of us this time, she said she'd like to go somewhere we normally couldn't go (we were normally "handicapped" due to sick extended family members). So I come here looking for advice.
We've looked at cruises, and although we do love them, that's something we normally do with larger groups. My wife is more of a beach goer, and resorts are probably the best bet for this. We've never been to Cabo san Lucas, so that could be a starting point. Are there any kid friendly resorts you would recommend? Also, any other tropical locales you would recommend. We're not trying to break the budget and would like to stay under $5K total. Although all-inclusive would be an idea, I doubt we'd get our money's worth since we'd be taking care of our 5-year old daughter. Thanks for any suggestions! I'm looking forward to my eyes being opened.

My friend went to Costa Rica with his young kid (under 2) and wife. His parents also went and he liked it a lot. Easy to navigate, etc. Not a terribly long flight. I probably wouldn't go too much further with a kid as I understand how difficult they can be.

Also looking to book a very similar trip in August with my wife and 2 kids (6 and 3). Some of the all-inclusives in Cancun have a kids club that do fun activities for the kids so the adults have do adult things.
I don't have anything booked and will keep an eye on this thread.
