You can stop at the NOC near Bryson City and camp. They have tent spots, showers, river side bar, and the Appalachian Trail goes right through it. Or just put on your backpack and hike up the AT a few miles and set up camp for a night.
You could also do a trip down the Nantahala River next day.
Not sure if that is convenient spot to stop or not.
ETA- Just checked, it would add less than an hour to total drive time.

Just looked at driving directions from New Orleans(I'm guessing) to Asheville. Nantahala Outdoor Center wouldn't be that far out of the way. If you want something closer to half way point try Cheaha State park in Alabama. They have some nice trails there also.

Check out Brevard NC and hike looking glass. It's about 30min +/- to Asheville. Also, Table Rock in upstate SC is pretty nice hike as well.

Fontana Lake is nice, too.

I would look into the area around Bryson City. The NOC and Smokey Mountain National Park are both right there. Tons of day hikes and places to camp unless you are looking to backpack which can be done easily with access to shuttles for the Appalachian Trail.
